Celebrated on October 1st , Vegetarianism Day seeks to present the benefits of a plant-based diet. To embrace this segment of the vegetarian population, the number of restaurants seeking to include meat-free options on their menus has been growing in recent years. The Peruvian restaurant AMA.ZO , headed by chef Enrique Paredes , offers three vegetarian dishes on its menu, including the Arroz Veggie (R$84) , which has rice sautéed with vegetables and Eryngui mushrooms in teriyaki sauce and fried kale. One of them is the Baked Eggplant (R$59) served with tomato sauce and buffalo mozzarella. Another veggie option is the Gnocchi Alla Fontina (R$69) , served with tomato-based sauce and Fontina cheese.
