The origin of secret bars: from Prohibition to contemporary sophistication


During Prohibition, bars hidden behind common facades offered clandestine drinks, live music, and an air of elegant rebellion.

The term speakeasy originated in the United States during the 1920s, during the so-called Prohibition, a period when the production, sale, and transportation of alcoholic beverages were banned in the country. To circumvent the ban, clandestine establishments emerged — often hidden in basements, behind laundromats, or barber shops — where customers had to "speak easy" (speak easy in English) to avoid drawing attention from the police.

With disguised doors and projects full of smoke and charm, the New York speakeasies of the 1920s transformed the night into an act of cultural resistance.

More than just places to drink, speakeasies became symbols of cultural and social resistance, with a strong presence of jazz, dance, and bohemian effervescence. Over the years, this aesthetic of secrecy and the forbidden has been revived by bars around the world, including São Paulo, which reinterpreted the concept with creativity and sophistication.

The most traditional one is hidden under the Astor bar in Vila Madalena, with an underground environment of sophistication, leather furnishings, and an audacious signature drink menu.

Another unit is located in the heart of Avenida Paulista, with a vintage inspiration and a more intimate project, ideal for meetings and drinks amid the urban hustle. The third address is inside the Farol Santander, in the historic center, at the famous Bar do Cofre SubAstor, located in the old vault of the Edifício Altino Arantes — an experience that combines architecture and history with mixology.

Located in the bowels of São Paulo's Theatro Municipal, the Bar dos Arcos is an architectural and sensory gem. Installed in the basement of the century-old building, the bar occupies corridors of solid bricks, columns, and vaults that create a unique project, where past and present meet under soft lighting.

Hidden beneath a unique construction in Vila Madalena — designed by architect Vitor Lotufo and marked by organic arches reminiscent of Gaudí — the Oculto is a true find. Access is by password, provided at the time of booking, and the intimate project with low ceilings and soft lighting invites immersion.

In the space, the bar shares with the San Basile distillery lab. The menu bets on creative combinations like the Painkiller, made with Spiced Rhum, grenadine, pineapple, Thai coconut cream, vanilla sugar, and kinkan, and the Alaska, made with Tanqueray Nº Ten gin, Byzantine herbal liqueur, and aromatic bitters with orange.

Above the award-winning Guilhotina Bar in Pinheiros is the Carrasco, a speakeasy for a few. The small, dimly lit, and quiet project sets the tone of exclusivity. The drink menu, signed by Alê D’Agostino, invests in complex flavors like the Butter Tuffees, which includes Ketel One Vodka, Zacapa 23 Rum, barley vinegar reduction, grapefruit bitters, and sparkling wine.

To complement, the kitchen led by Chef Thiago Cerqueira offers creative dishes like Curry Shrimp with green beans, edamame, and katsuobushi, in perfect harmony with the contemporary cocktail universe.

On the second floor of Original bar in Moema is the Câmara Fria, the first speakeasy specializing in artisanal beers in the capital. With an industrial aesthetic and relaxed project, the space stands out for its variety and quality in its Tap List, in addition to naturally fermented pizzas and artisanal snacks.

Among the highlights of the menu are the Cuesta Azul Pizza, with blue cuesta cheese and dark beer sauce, and the bold Thai Pizza, which combines glazed pork belly, shrimp, peanut paste, and a spicy salad with bean sprouts.

8. Mé Taberna – A modern speakeasy with the soul of a Spanish tavern

Hidden in the basement of MeGusta Bar, the Mé Taberna is inspired by medieval taverns and has a name that alludes to the popular expression "let's have a mé." The entrance is secret — accessed through an antique wardrobe — and the space accommodates only 20 people. The decor is rustic, with exposed stones, dim light, and friendly sheep scattered around, from the menu to the ceiling.

With only 20 seats and an entrance through an old wardrobe, Mé Taberna blends rustic charm, low light, and sheep in every corner.

With curation by Chef Renata Vanzetto, the menu focuses on small shared portions, influenced by Spanish tapas bars and focusing on ingredients from small producers. Among the highlights are the shrimp fideuá cake with squid ink emulsion, the conserva of octopus head, the meat croquette with au poivre mayonnaise, and the mullet board with bottarga. The intimate atmosphere, combined with culinary creativity, makes Mé one of the most original (and well-hidden) bars in the city.
